1/2 चम्मच बेकिंग सोडा
1/2 चम्मच दालचीनी
1/4 चम्मच नमक
10 बड़े चम्मच (1 1/4 छड़ें) अनसाल्टेड मक्खन, कमरे का तापमान
1/2 कप चीनी
1/2 कप (पैक) गोल्डन ब्राउन चीनी
1 बड़ा अंडा
1 चम्मच वेनिला अर्क
1 कप पुराने जमाने का जई
1/2 कप सेमीविट चॉकलेट चिप्स
1/2 कप दूध चॉकलेट चिप्स
1/2 कप सफेद चॉकलेट चिप्स
1/2 कप मोटे ताजे या जमे हुए क्रैनबेरी
2 औंस दूध चॉकलेट या सफेद चॉकलेट, कटा हुआ (बूंदा बांदी के लिए)
तरीका
1 एक पैन में 3 टेबलस्पून रिफाइंड तेल डालें और तेल को तब तक गर्म करें जब तक यह तलने के लिए एकदम सही न हो जाए
2 आलू डालें और इसे लगभग 2 मिनट तक भूनें
3 अब एक एक करके बीन्स और गाजर डालें, पैन को ढक्कन के साथ कवर करें और इसे 1 मिनट के लिए पकाएं
4 जब सब्जियां पक जाएं तो उन्हें एक तरफ रख दें और बाकी की सब्ज़ियों को तल लें और 2 मिनट के लिए भी पकाएं
5 पकी हुई सब्जियों को दूसरे कटोरे में रखें और पैन में एक और 1 चम्मच तेल गरम करें
6 तेल में जीरा डालें। 30 से 40 सेकंड के बाद, कुचल या कटा हुआ प्याज जोड़ें और इसे लाल होने तक हिलाएं।
7 अब इसमें 1 छोटा चम्मच अदरक लहसुन का पेस्ट, हरी मिर्च, और टमाटर डालें। इसे थोड़ा सा हिलाएँ।
8 नमक, हल्दी पाउडर जोड़ें और इसे अच्छी तरह से मिलाएं। अब इसे ढक्कन से ढक दें और इसे मध्यम आंच में 2 मिनट तक पकने दें।
Mix veg Kadai is a delicious side dish. It can be made at home very easily with sauteed mix vegetables, cooked in tomato gravy and seasoned with fresh Kadai masala. It can be more delicious and tasty if you can put a pinch of dhaba twist. Butter nan, soft phulka, and jeera rice are the names of best companions of the Dhaba style mix veg Kadai.

Put 3 tbsp refined oil in a pan and heat the oil until it's perfect for frying
Put the potato and fry it for approx ½ minutes
Now add beans and carrots one by one, cover the pan with a lid and cook it for 1 minute
When the vegetables are cooked, put them aside and sautee the rest of the veggies and cook them for ½ minute too
Keep the cooked vegetables in another bowl and heat another 1tbsp oil in the pan
Add cumin in the oil. After 30 to 40 secs, add the crushed or chopped onion and saute it until it turns red.
Now add 1tbsp ginger garlic paste, green chili, and tomato. Saute it a little bit.
Add salt, turmeric powder and mix it well. Now cover it with a lid and let it cook in a medium flame for 2 minute.
It's time to add spices. Add Kashmiri red chilli powder, coriander powder one by one. Sautee the mixture very well and continue to smashing them a little pressure.
When it becomes a little dry and thick, add fresh cream and fenugreek and mix well until the mixture starts to come together by separating from the pan.
Now when it is thick enough, add ½ cup of water. Wait until it starts boiling and covers it with a lid. Let it cook in low to medium flame up to 5 minutes.
When you see oil is floating on the top layer, keep the lid aside and add the fried vegetables and mix them with gravy. You can also add paneer if you want.
Now add a mixture of ground spices and coriander leaf and mix them.
Add 2 tbsp water (you can add more water in case you want more gravy) and let it cook for another 5 minutes in a low flame.
After 5 minutes, turn the gas off and push the boul of heated charcoal into the dish and cover the pan with a lid for up to 10 minutes. Don't forget to put 4 to 5 drops of ghee on the charcoal. The smoke of charcoal will give your dish an amazing flavour, just like how you eat in dhabas.
After 10 minutes, pick the bowl of charcoal up and serve the Dhaba style mix vegetable Kadai with nun or phulka and enjoy your amazing cooking.
